1 bag Avocado Ranch Chopped Kit
450g beef mince
4 Cups shredded Mexican blend cheese
½ Cup pickled jalapeños
1 Avocado, sliced
1 Large tomato, diced
¼ Cup thinly sliced spring onions
1 Large bag tortilla chips
1 Large onion, chopped
2 Garlic cloves, minced
¼ Cup water
1 Tbsp. extra-virgin olive oil
¼ Cup fresh Asian coriander leaves (optional)
1 Tbsp taco seasoning
Preheat oven to 230ºC and line baking tray with foil.
In a large frying pan over medium heat, heat oil. Add onion and cook until soft, 5 minutes, then add beef mince and cook until no longer pink. Drain fat.
Add garlic and taco seasoning and season with salt. Cook until meat is well browned and slightly crispy.
Add half the tortilla chips on the baking tray and top with beef mixture, and half the cheese. Repeat one more layer.
Bake for 15 minutes until cheese is bubbly and melted.
In a mixing bowl toss the Taylor Farms Avocado Ranch Chopped Kit with half of the dressing and half of the toppings.
Remove the nachos from the oven and immediately top with pickled jalapenos, tomato, avocado, spring onions, Asian coriander and remaining chopped kit toppings.
Drizzle with remaining chopped kit dressing and enjoy!
