Mini Mediterranean Grilled Pizzas


1 Taylor Farms Mediterranean Crunch Chopped Kit

1 large brown onion, peeled and thinly sliced

2 250g packages naan breads (original or roasted garlic)

1 283g container hummus (classic, roasted red pepper, or roasted garlic)

1/2 cup sun-dried tomatoes packed in oil, drained and sliced


Heat 2 tablespoons of cooking oil in a large skillet over medium. Once hot, add onions and cook for 5 minutes, stirring often, until the onions start to soften. Season with a pinch of salt, reduce heat to medium-low, and continue cooking, stirring every few minutes, until onions are blonde-colored, about 15 minutes. Remove from heat.

Lightly spray naan breads with cooking spray (or brush with oil). Grill both sides over an open flame on an outdoor grill, or on a grill pan over high heat, until lightly charred.
Spread hummus evenly onto each grilled naan bread. Sprinkle caramelized onions and sun-dried tomatoes overtop.

Empty contents of Mediterranean Crunch Chopped Kit into a large bowl and toss with dressing. Spoon salad evenly over each naan bread. Enjoy!
