Hot Honey Chicken Caesar Salad

Hot Honey Chicken Caesar Salad

1 Taylor Farms Caesar Salad Chopped Kit
½ kg boneless chicken breast tenders
2 eggs
1 ½ cup panko bread crumbs
1 ½ tsp kosher salt
½ tsp ground black pepper
1 tsp garlic powder
Pinch of cayenne pepper
2 tbsp olive oil
½ cup honey
¼ cup hot sauce

Preheat the oven to 200 C. Line a large baking sheet with baking paper, place an oven-safe rack on it, spray with oil or non-stick spray and set aside.

Cut chicken breasts into long, tender size pieces.

In a shallow bowl whisk together eggs and set aside.

In a separate shallow bowl combine panko bread crumbs, salt, black pepper, garlic powder, cayenne pepper and olive oil. Mix together until crumbs are coated evenly with olive oil.

Dip chicken tender pieces one by one into eggs, and then dredge in crumb mixture, pressing the crumbs into each piece. Transfer dredged chicken pieces onto the rack, making sure there are 5 cm between each chicken piece. Sprinkle any remaining crumb mixture onto the chicken pieces.

Bake chicken for 15 minutes. Flip chicken pieces and continue to bake for an additional 10-15 minutes, or until chicken is crispy and cooked through.

Whisk together honey and hot sauce and brush on the chicken for the last 10 minutes of cooking.

In a large bowl prepare Taylor Farms Caesar Salad kit and top with honey chicken tenders.
